    But tartar sauce makes you sad? 

    All this talk of sauces reminds me of my first job working washing dishes at a bar/restaurant, back when 12 yr olds worked. Anyway, they made their own sauces. French dressing was mayo and ketchup. Thousand islands was French with sweet relish. Tartar sauce was mayo with dill relish.  Cocktail sauce was ketchup with horse radish. I still make them on occasion.
