Brisket I did Monday. I start my long smokes later in the morning with no intention of eating it for dinner that night. I have to stay up late to finish it, but I'm not rushing to get it done by a certain time

The only meat that showed up with our food delivery was some ground chicken. I made tiny Asian meatballs with ground chicken, minced ginger, garlic and scallion, an egg and some panko breadcrumbs. I pan fried them in a little veggie oil. I caramelized them with a little oyste sauce and soy at the end of the frying.

Any other ground meat, like pork or turkey, I would put some sauce in the meatballs, but ground chicken is too wet.

To finish them off I sprinkled with dark and light sesame seeds and a little sesame oil, with some strips of green scallion for color and because I love scallions. We didn't have any veggies for a stir fry so just had them on jasmine rice.

That was my first crack at brisket. Turned out awesome. I'm gunna start buying it every time it's on sale. Got this 13.5lber for $33. Been eating it all week. Brisket sammiches, brisket tacos, brisket quesadillas, brisket midnight drunk snacks :roll:

Last time we had brisket, I got the biggest one I could get from our butcher and made Brisket chili.

You can slice up some brisket, blacken it with chili spices in a cast iron skillet in the oven to make extra burnt ends. This made the chili magic.

I'm hung over, so I'm making this today: Slow Cooker Low Carb Zuppa Toscana Soup (Keto-Friendly)

 

Ingredients

1 lb mild or hot ground Italian sausage
1 tbsp oil
½ cup finely diced onion or 1 medium onion
3 garlic cloves, minced
36 oz chicken or vegetable stock
1 large cauliflower head, diced into small florets
3 cups chopped kale
¼ tsp crushed red pepper flakes
1 tsp salt
½ tsp pepper
½ cup heavy cream
Instructions
Brown the ground sausage in a skillet over medium heat until done.

Using a slotted spoon, remove the sausage and place it into at least a 6-quart slow cooker. Discard the grease.

Place the oil in the same skillet and saute the onions for 3-4 minutes or until translucent.

Add the onions, chicken or vegetable stock, cauliflower florets, kale, crushed red pepper flakes, salt, and pepper to the slow cooker. Mix until combined.

Cook on high for 4 hours or on low for 8 hours.

Add the heavy cream and mix until combined.

One thing missing fromt he ingredients is ground sage.  I recommend adding a healthy dose to the soup, it gives it a really nice depth.  Also, I  substituted heavy cream for coconut milk.  And forget dicing up a cauliflower head.  Just buy frozen riced cauliflower from Costco and call it a day.

 

Also, I recommend that you change the order of the recipie:

1) Turn on the slow cooker and add the spices

2) chop the kale and add it

3) add the stock, stir, cover with a lid

 

After that I chop up the onion and garlic.  The cook that before the beef.  Reason being, the kale needs to cook down before the stock covers the ingredients.  So if you put the kale in first, by the time you get done chopping the onion\garlic and cook everything up, the kale will be softened enough.

Nice!  I usually make a similar version of this at least twice a year.  It's surprisingly one of the most flavorful things I make in the crockpot.

Does anyone have a decent turkey burger recipe?  Having people over Saturday for a laid back "Burgers & Dogs” cookout, and of course there’s one high maintenance broad who only eats turkey burgers.  :thumbdown:  I looked up some recipes, but they all look like sheet.

Just get some ground turkey, salt, pepper and handmake a patty for her.  Then throw it on the grill.  Tell her that it's done and when she comes over for it smash her turkey beak on the grill and shove a regular burger in her mouth and tell her to piss off.

I’d love to.  I feel like telling to make her own ukn’ turkey burger.  Funny thing is, she’s kinda plump.  It’s not like she’s 120lbs and in shape.  She’s a fat, ukn’ wanna be skinny chick.

Just put a piece of cardboard between the 2 buns and tell her it's a turkey burger.  They taste the same.
