Mustard is interesting.

Yellow mustard is terrible.

Spicy brown mustard, stone ground, dijon, are all great.

The only time I eat yellow mustard is on a soft pretzel when that is the only option. Otherwise, no mustard is better.

The cheese goes on the bottom, because unless you are using swiss, it is impervious to the liquid generated by veggies and salt. The juice stays away from the bread. Soggy bread is worse than mayo.

I will give you that it's not traditional on a hoagie, but can you specifically say why it doesn't belong with cured meats? Or is it just "reasons."

I generally do not opt for yellow mustard. It doesn't have much appeal to me, but it just feels classic on a hot dog, so I usually have yellow on a least one if I'm making a few.

I only eat mayo on a turkey sub (or with tuna obviously).

I only use mustard in cooking (Dijon or spicy brown depending on recipe). 

A nice hot pastrami (the lean stuff) on rye with swiss and brown mustard is pretty stellar.

I put mustard on everything. I dip my fries in yellow mustard. Fight me.

Same reason you don't put grape jelly on a burger or ketchup on spaghetti. Just doesn't jive well. Maybe it's the higher salt content in cured meats or something, I don't know, but just thinking about salami slathered mayo is weird.

Yeah, I'm pretty tolerant of variations to food, but one thing you don't mess with is cheesesteaks. I will publicly shame you. Just cheese and fried onions is pretty much all I will countenance. I did try some of those hot cherry peppers last time I got one in Philly, though, and it was pretty good. That felt adventurous. My brother, though, puts f***ing ketchup on his. The worst part is that he's actually from Philly, and he defends it! Weirdo grew up in S. Jersey, though (technically my half brother), so that must've ruined him.
