Daughter in a wedding this weekend so she sent 2 orders to my house.  The one bag was screwed up and doesn’t go with the recipe. I now have ingredients and no idea what to cook for supper!

I already cooked pork tenderloin the day it came. Ate some.  Then shredded it and put in my tomato sauce with pasta last night cause I eat a bunch of pasta since mr Di has been gone and I am 50% Italian.     
 

I have arugula. Pitas. A soft small zucchini.  Some sort of flour to make a fitter. Um, no!  Garlic powder. An onion. Two lemons.    A dozen little sour cream packs. The attached pic that will certainly send my bowels into oblivion.  Two sweet potatoes, dried cran berries and feta cheese.  WTF?

Thinking a salad. I do love arugula with some garlic and lemon.  Save the sour cream packs and yams.  What a waste!   I feel bad but I don’t trust this. 
 

just throwing it out there in case anyone has a better idea.  I hate wasting and throwing food away

I went with a salad. It was good. I’m so sad and functional but there are weeks and days I just want to set the place on fire.  I wonder if I’m actively trying to kill myself?   My life changed Jan 26-2014.  That’s the day my father died.  My mother was an uncontrolled diabetic and had dementia enough she could not be left alone.  I took FMLA and stayed with her.  Mr Di was my rock thru our grief, taking care of my childhood home, which we eventually placed my mom in assisted living (worse day of my life) and selling the house. Mom died after her 80th birthday in 2015.  Then the in laws started. Too long of a story.  Then you know. Mr Di. He actually thought they might not treat him due to his smoking history.  His oncologist was honest. He was a trooper until he couldn’t do anymore.  Cancer will eventually kill you.  Did I mention I have a younger sister who has metastatic breast cancer ?   At age 50 diagnosed just after our father died?  Yet I still waited and never went til I was 56-and by that time had a tumor.  Dumb.  
 

I think turning 60 is realing on me and surely my daughter is up to something that will most likely coincide with opening day. I’m watching the game but it’s so totally different.   Thanks for letting me share.  I’m still here.

My youngest turned 28 today.  He’s well ahead of his time compared to where his parents were at 28 years old. He may not have a degree and I barely got him out of high school,  yet he is an earner and has money.  Always working and earning.  I want him to save me when the end of the world comes!   Heartbroken his Dad is not here to share. I can’t imagine how he feels.  He’s awful young to have lost his dad.  Going out to dinner in a few.  Proud and sad at the same time.  Emotions I never thought I would have. Like being an Eagles fan.

My 20 year old son is the same way. We barely drug him across the finish line in HS, and were fine when he said he wanted to delay college and go find a job instead. He went to work for a company that contracts with DHL to unload their planes and trucks at the airport. Working God awful hours, I think it was 9pm to 1am, then back in at 6am to 10am. When I first heard the hours, I said no way he lasts, but he went in early every shift, stayed late every time they asked him to, learned every job they had and, before long, had caught DHL’s eye. After a year there, DHL asked him to come work for them. He brought the same dedication and attitude to that job and, less than a year later, they asked him to apply for a supervisor position. He’s working with 35 & 40 year old people who are going to be pissed when they find out he’s getting the job over them, but I couldn’t be prouder of him for what’s he’s achieved so far.

If I may hijack this thread, can anyone recommend a potato peeler that actually works? Past year I've gone through three that are pieces of s***. Last one I had may as well had the DC universe logo or WW84 on it. So you can only imagine.

Potato peelers all are just flat out crap. You are better off just getting an extra sharp knife and peeling it with that.

Look brah, I'm a big fan of loaded potato skins, Five Guy's unskinned fries and the like, but sometimes you gotta peel them little Fers.

Lol I get you but, the red and white skin mashed are thin as long as you cube them up and mash them thourghly.

The kind of potatoes you are talking about are made out of russet potatoes and those yes they absolutely need to be peeled for mashed. 

Sorry I worked in produce for a long time. People drive me nuts with some of this stuff ( not you lol), I know you work in retail and you get it too lol.

Hang in there, Di. You have people who still love you and need you. My stepson probably has about a month to live because of effing cancer. He's 27. Trying to be strong for his Mom but what can you do? It just sucks. Need to cling to family and friends.
