Looking good bro.  Haven’t used the smoker in a while.  Might do a butt or ribs next weekend. 

Grilled bacon, Italian sausage, and some Turkey dogs this afternoon. No pics of that. But here's a couple of pics of my dog. She loves it when I grill.

Not smoking or grilling, but braising some lamb shanks today. Got them locally from a smalltime farm. I've got a killer recipe that's perfect for wine pairing, so we're taking a trip to Rioja today.

I'm always bad getting pics when the stuff finally gets on the table. It's always kinda hectic. Hard to see the shank in there under the vegetables. I might get a better shot when I make warm-ups later this week. It's pretty simple prep, but the wine and balsamic vinegar give it a ton a flavor, and after 3 hours in the oven, the meat just collapses off the bone and truly has synergy with a glass of rioja. I serve it on a bed of creamy mashed potatoes and lashings of the braising liquid after reducing it a bit.

Looks great.  But I'm not a lamb guy, at all.  I would drink the spanish red wine.

Yeah, I never really thought I was either, but this preparation is pretty killer. The shank is pretty lean, and while it does still have that distinct lamb flavor, it's really driven more by the herbs and the wine/balsamic that it cooks in. My mom swore off lamb most of her life, and she didn't think she'd like this, either, but she ended up loving it. I think her experience had mostly been confined to like lamb chops/rack of lamb, which is really fatty and definitely an acquired taste. She does like gyro's, though, so I think there's something to the leg/shank portion of lamb that's more easily tolerated by people who don't eat lamb much.

Looks a lot like an Osso Bucco preparation.  Probably made the whole street smell good.  

Yeah, the house smelled great. When my parents showed up, my mom said it smelled really good, so I started figuring she was gonna want some of the lamb. Honestly, one of the best ways to advertise some food is by smell. There's a lot of psychology behind that.

Yeah.  It was windy down here too.  Just not as cold.  I saw it was snowing in Altoona.  Haha.  So glad we left that place. 

Smoked Jerk Chicken and saffron rice. It was windy here as well, temps bounced around a bit at the end. We actually had snow flurries.

How did you make/prepare it?  I’m a huge fan. I’ve been to Jamaica 3 times and that’s all I wanted to eat. I know I won’t be able to replicate it but I’ve had a bottle of jerk sauce sitting in my fridge for about 2 years now. 😂

Wife picked these up for me in Savanahh this past weekend.  Never used them before.  I’ll smoke a baby back for the UNC/Duke game and report back.

Lmao. My bad. I meant to type out the recipe (fair amount of ingredients) a bit later and forgot. Ahole move, I know. I will do it by tonight.

Will be grilling today! Sunny, not a cloud in the sky, 58 degrees here in Delaware.

Sitting on the back deck now. Vodka and diet Pepsi has made it's way into a large cup somehow and is being consumed with passion. :groovy:

Menu -- chicken sausage, bacon, wagyu ground beef, and my wife asked me to throw on a cod fillet as well.
