I have a picnic in the fridge.  I'll smoke it and serve it carolina style later this week.  I don't chop/shred it like they do down here though.  Pull with hands as to keep it from drying out.

Ready to sit in the crock pot all day tomorrow while we’re at the beach.

Couple racks of ribs for later. Used a sweet rub and making a cola sauce with a bit of heat. Probably make a couple dozen wings and potatoes wedges later to have with them.

I made two boneless butts last weekend for a party (the costco two pack).  Came out great.

 

I do prefer bone in, but I bought and cooked a TON of food for that party and these were cheap lol.

That rib looks tasty.

I have a rack In my freezer I need to smoke.

Did brisket two weeks ago for my parents, still have a bunch in the freezer needing to get eaten.

Is your top pic Salmon?

I do salmon in the Air fryer now, finish with a chipotle peach glaze.

Left over brisket has slowly become our favorite food. Theres so many options that taste better the 2nd time around. Taco's, chilli, breakfast hash. 

Come winter I'm gonna make a sheppards pie(one of my 7 year olds sons favorite food) with Brisket. 

Shepherds pie with brisket sounds tasty, I hate it with ground beef.

I want to do some grilling today, but it's just too windy. My fire would be all over the place. I'll wait until tomorrow or Monday.

I actually forgot to pick it up so I had my buddy buy it on the way in. He said he wore sunglasses and a hat into the store and used self checkout so no one would see him buying kale :lol:

Figured I'd move this conversation over here. 

I'm starting to fix up an old smoker I've had sitting around for a few years. It's an 6' tall old commercial propane smoker that had the propane guts ripped out of it. I'm going to covert it to a charcoal smoker. Had some cheap charcoal in a makeshift basket in it the other day. Temps shot way up (550ish) because bottom door opened, but once I got it to stay shut it held 300 for about an hour. With some airflow mods I'm hoping to get it to hold 250ish for 6 hours or longer. 

Also, I'm going to try to find some stencils and grill paint once it's finished and make a Philly sports logo camo on it.

That sounds like a really interesting project, definitely post pics when you have a chance.

I've found that simple, jenky smokers can give you great results sometimes. My dad used to smoke brisket for their business in what was ultimately a raggedy-ass 3.5-ft. aluminum barrel with a dome over it and let it go overnight while he slept. That thing did work til it was basically a rusted-out POS. When it's small like that, you can maintain temp with minimal coals and get a lot of smoky flavor infused through dense air circulation. You don't really need anything fancy to get the job done. You can smoke out of an aluminum trashcan if you set your mind to it

Has anyone ever used that carne picada from meat Walmart. I think I’m using it for this recipe.

Yes.  Great for tacos.  Slamming.  Also since you're going to wal mart get these if they have them.  Will change your taco life.  

 

So much better than the already cooked ones.

I bought some skewers and a little travel charcoal grill to take to the cottage.  I will be having boneless rib eye with baby potatoes which I will boil for a few minutes at home, peppers and onion.  Also shrimp with pineapple and sausage.  I have a regular andouille sausage and a pineapple habanero flavored sausage.   A summer orzo salad.  Friday's lunch for Mr Di's birthday.

If you've never tried the corn tortillas flash fried in oil to use as your taco shells, I highly recommend
