November 23, 20205 yr My Mom's recipe for brining if deep frying your turkey 2 quarts apple cider 1 cup of brown sugar 1 cup of kosher salt 1/4 cup of black peppercorns 4 bay leaves 1 cinnamon stick 1 tsp. whole cloves 4 quarts of chicken broth or water (You can go full broth, full water or half and half) Bring 4 cups of broth/water to a boil. Add everything except cider and rest of broth/water. Stir until dissolved. Let cool and stir in rest of broth/water and cider. Place turkey in stock pot breast side down. Pour in brine. Add extra broth/water until covered. Leave in brine for 24 hours in the fridge. If deep frying, remove turkey from brine 24 hours before putting the turkey into deep fryer. Pat dry and place in fridge uncovered until ready to fry.
November 23, 20205 yr I always brine my turkey...Im roasting my bird and stuffing one end with giblet stuffing and the other end oyster stuffing...i put it on 225 with buter under the skin and rubbed with seasoning and butter, ill uncover it in the morning to brown the skin...just like my mom did.

November 24, 20205 yr I do not use mayo. Its just like regular stuffing but instead of using giblet meat i use chopped up oysters.
November 25, 20205 yr Author Putting the buttered garlic and herb paste under the skin and down both sides of the breast was harder than I thought. I didn't tear the skin thank goodness but I didn't get it all the way back in the bird. Hope it doesn't result in part of the meat having a stronger taste than another. 🙄

November 26, 20205 yr Cooked a whole turkey in a little propane smoker/oil-less turkey fryer, and a breast in the offset smoker. Finished the breast in the fryer to crisp up the skin. Both were amazing, especially for my first time cooking a turkey in anything
