April 11, 20214 yr Wine time. I did a quick pan-braised pork chop with some mean mashed potatoes. The lady is out for the night, and I didn't decide what to eat til the last second, so of course I decided to do something that would take me 2 hours and I'm eating at 10 PM. Oh well, at least the late dinner is appropriate for the Spanish wine (garnacha)! While waiting on the potatoes, I cooked the chop a little more than I'd prefer, but it had plenty of flavor. I sauteed onion and garlic in oil, then coated the chop in salt, pepper, and thyme and dropped it in the pan, covered and simmered for awhile.

But an offset like this makes better food in my opinion

But an offset like this makes better food in my opinion I was thinking offset. Kettle is tight on space for smoking since a quarter of it is coals. Doesn't leave a ton of space for the meat. Thought about a pellet smoker but I don't mind babysitting a little and I'd agree that a offset would be better flavor.
April 11, 20214 yr My knee is jacked up but I desperately need to finish some projects ASAP, so yesterday I balanced getting s*** done with resting and icing it. 1) Repaired drywall in the nursery closet and the basement ceiling (had to reopen a patch I JUST fixed ) 2) Painted baseboard trim in the workout area 3) Cleaned and laid mats in the workout area 4) Ripped down 3 doors so they fit (upstairs bathroom has a higher threshold and two of the basement doors were too low to go over the mats) 5) Cleaned the floor of paint drippings because of the messy job drunky over here did Unfortunately we ended up being 4 mats short, so the workout area project isn't 100% done. Once I get them I'm moving the peloton and weight bench downstairs Schmoopie also started a project: Staining the railing and painting the posts white. Of course dumb ass here grabbed the wet railing as I hobbled down the stairs Today I'm working on the fireplace we are putting in. We are adding cabnets and shelves so I'll most likely be working on running the wire. The goal is to put in outlets in the shelves themselves so they are hidden so I'll have to run the wire in the wall to approximately where they will be. I'm also toying with the idea of putting in PVC tubing into the bump out that we built for the fireplace so people can easily run HDMI cables in and out of it. Not sure how feasible that will be. I ran cement board between the stove pipe and where the TV will be, so it should sheild it from the heat I also put mortar in where the gaps are because I'm anal.

My old one was a $120 nexgrill. The metal on it was thin, the fire box was small and did t have enough air flow in it. Don't get me wrong, I made a lot of good food in it, but it needed pretty constant babysitting. I basically had to keep the fire burning really hot, but make sure it didn't get too big to wear my temps went through the roof. New smoker I can pretty much keep at a constant temp for at least 30-45 minutes, and even after that, if it starts to go out, it's pretty quick to get back up to temp.

April 24, 20214 yr This is, roughly, the state the firebox\fireplace is in: The goal today: 1) Finish framing the TV enclosure. 2) Run electric (The plan is to have two floating shelves on each side each with a built in outlet plus one outlet on each side above the base cabnets) 3) Run cable 4) Inside the frame of the TV enclosure I am running conduit to create "channels" to run HDMI cables from the TV to either side of the fireplace. 5) Close everything up with cement board so I can install the base cabinets, put up shiplap and build the floating shelves. Lofty but doable. Needs to get done because my knee stalled me last week

April 24, 20214 yr Raining in Charlotte today so my golf was cancelled. I have to finish putting my daughter's crib together today, and then her room will be pretty much finished. She's still over 3 months away from being born and her shoe collection is better than mine.

We usually go May 1 to Sept 30, so we get 5 months out of it. The oldest's birthday is this week and since it'll be her second lockdown birthday we decided to open it up for that. I lived in Chicago for 2 years in River North, and when the pools opened, it was better than it is in the south because people knew they had a limited amount of time. Happy Birthday to your oldest!!
