It's a good time, they have bands, food trucks, breweries and a bunch of vendors. It's a good time. Plus a bunch of drunk people cooking BBQ

June 18, 20241 yr So, we didn't get any pictures of our chicken box, but here's our pork and brisket from Saturday. The person that organizes the comp told us it was the best brisket she's ever had, and the judges echoed that after the results were read.
July 5, 20241 yr Made some prime rib today in an attempt to clean out the freezer. Also started messing around with som ideas for chefs choice ancillaries. We've got one coming up in August. Did smoked short rib on a grilled baguette with smoked Brie and balsamic glaze. It was really good but I might add pickled red onion next time And for entertainment, Super Bowl LII...

Set up a 2x1 snake with some wood chunks can hold 225-275 for 7-9 hours once the airflow is dialed in before having to refuel. Hot and fast, indirect or reverse sear no problem. Love it. Only downside is space when doing a big BBQ. Need the Ranch kettle but they're like $1900.
July 11, 20241 yr my electric smoker went. need to get a new one, but im done with electric unless i go pellet, which im not sure with yet. thinking about getting an offset.

July 24, 20241 yr Damn Bfit… you’re killing it in here. I’m making bacon for the first time this weekend. Dry brine currently curing in my fridge. Went with salt, brown sugar and honey, black pepper, and Prague’s #1. We’ll see how it goes.

July 29, 20241 yr Nice! I made bacon for the first time. A few lessons learned… this batch is too salty. It may be relegated to a flavor bomb in my next batch of chili.
