Still climbing in KCBS. Got 9th in chicken and 2nd in ribs this past weekend down in DE. 7th overall. We've got one more event left for the year, a 2 comp weekend in Columbia, NJ. Right now we are 24 in the nation and 9th in the mid Atlantic in ribs. A couple good finishes this weekend and we could jump into the top 10 nationally and top 3 in the mid Atlantic.

Some of them have peoples choice categories that the public can buy sample plates of and vote on. This one had people's choice wings last night and pork this morning. But, everyone cooks a lot more than they need to turn in and if you ask, they'll let you try some.

So we had an ok start to the season. After turn ins I thought our chicken was great but thought the ribs were trash. Well, I guess that's why I'm not a judge, because we got 5th place chicken and 3rd place ribs, good for 4th overall.

I ate at a luncheonette in southern New Jersey once and there was a hair in my coleslaw. I paid my bill and promptly took my leave.

As if anyone needed a reason not to find themselves in that awful colony I had enough cause in that moment.

Unless you're stranded on an island with a volleyball you need to groom your unwieldy countenance.

I feel like I have to update this post with my competition results now. Last weekend we had a 2 day in Williamsburg, VA. Chicken was 8th place both days. I guess we're consistent there. Ribs were 20th the first day and 3rd the second. Funny story on the ribs. First day I realized I forgot syrup for my rib wrap, so I used pineapple juice. Just a little bit. Figured it would give me some sweetness. Well, it overpowered everything. After awards, I went to my buddy's site and he asked me what happened toy ribs. When I told him I used pineapple juice he told me that a judge was just over at his site hanging out and told him that he got served a pineapple rib and it ruined his day roll

Needless to say, I fixed it the second day.

Oh, and we got 3rd overall the second day and got our gun trophy we came for

no, they are gateway smokers. you can definitely build one for a lot cheaper, but these run really well. a lot of teams use them, mostly because they are easy to transport and cut down on cook time. we can get 3 racks of ribs down in about 2 hours.

smoked some fresh caught trout on sunday. came out excellent. just tossed a little kickin chicken seasoning and used mesquite for 2.5hrs on 250 for nine fish.

With as much as I fished when I was younger, and as much as I smoke now, I still never smoked trout. I need to change that soon. Catching trout in the morning and smoking them that afternoon sounds like a great way to spend a day

i was the same way until last year. now it's something i can't get enough of.

i just head, gut and clean them, then lay them on foil. when they're that fresh i don't even use any butter. although i don't think that would be a bad thing either.

In all seriousness, I still use a regular grill. I haven't switched to a Blackstone. Sure you can do different things on a Blackstone like stir-fry, veggies, smashburgers, eggs, breakfasts, etc. But I still like the grill for steaks, burgers, chicken, etc. Nothing beats the sizzle of the juice hitting the heat and smoking back up. Just get yourself a cast iron griddle pan and you can turn your grill into something like a Blackstone.

So last weekend we went to the New Jersey State BBQ championship in North Wildwood. It's a master series competition, meaning we have to cook brisket, pork butt, ribs and chicken. It also means that we were cooking against the best cooks on the East Coast. The reigning team of the year in KCBS was there, as well as half of the top ten from the KCBS last year. We got to drink a few beers with Big Moe Cason, who's been on all of the big BBQ TV shows, which was pretty cool. We cooked all the ancillary categories on Saturday, including my wife's first entry (Oreo cheesecake cupcakes for the dessert entry). It was a really cool competition, competing against 63 really good teams and cooking right next to the ocean.

We did pretty good too....

Saturdays Ancillaries were;

Burger: 25th (only thing we didn't take pics of, but we cooked Cheesesteak burgers with a fried onion smoked cheese whiz sauce)

Sauce: 6th

Dessert: 25th

And the main comp on Sunday;

Chicken: 13th

Ribs: 1st

Pork: 36th

Brisket: 7th

Overall: 8th

We did way better than we expected, especially considering we were competing against 63 of the best teams in the East Coast. We also met a bunch of people in the business, so we may be able to get some more sponsors for next year, especially after our showing this weekend.
