May 30, 20214 yr Alright, so everything got a little hectic at the end, and I totally failed at getting pics (had been drinking for awhile by that point, lol) but the pork was amazing. I didn't bother taking it out and finishing in the oven. I just wanted to keep things simple and smoke untIl done. After 11 hours, it was still temping at only about 165 (I'm sure the vent fiasco probably had something to do with this, so I'll make sure that's secured next time). I was targeting 195-200, but was getting worried about drying it out after that much time and and it only being a 8-pounder, so I pulled it off and gave it a 30 minute rest. It was falling off the bone and sliced up easily, maybe not "pulling" quite as thinly as you'd prefer if you're really picky, but still very good and made great sandwiches and paired perfectly with Malbec. The only finished pic I got was this one that my dad's blurry arm is obstructing. I'll post some more of the sliced meat when I pack up the leftovers here soon. The family loved it and was still complimenting it today. All in all, a pretty successful first smoke. Thanks again to all who advised!

I think spraying hourly with apple cider vinegar is a great technique. I think helps keep it from drying out while also integrating with the seasonings and keeping them moist enough to keep infusing the meat.

June 2, 20214 yr scheduled PTO for the first time in 8 years to start tomorrow. a month ago i get a jury summons. so hear i sit in a zoom meeting all day waiting to hit the SA jury lottery and (fingers crossed) spend the vacation downtown in a courtroom (zoom meeting for the selection pool/courthouse if selected to a panel) . Joy. debated grabbing and throwing on one of chickie's old subway shirts to prove i'm incompetent. what sucks (for the court clerk at least) is the best wifi reception is in her red room . edit: oh this is great, older woman is trying to claim exemption because: no sé mucho sobre esas cosas de la corte ( i don't know much about that court stuff ). another one; male 50-60 years old: i recently had brain surgery but i think i'll try and stick it out for the day today but have chemo on Thursday if you can deal with possible vomiting while online. yeah, i'll stick it out after all i served 27 years in the army. i have strep throat and don't want anyone else to get it. edit edit: just figure out how to get out; it'll likely get me killed but i'll just claim exemption and when asked why... 'spanish isn't my first language; i wont know what any of the defendants are saying' .

I was selected for jury duty once, ended up being a local police officer that was accused of using his position of authority and power to persuade young girls to have sex with him, molest them, etc. Had to sit through 3 or 4 days of that type of testimony. I actually ended up being selected as the jury foreman so I had to read the verdict on each charge in the court room at the end of the trial. I had one for a domestic violence case. 4 generations under one roof, almost all of them with names starting with the same letter. Got to admit, I loved it too.

I fully know real life court proceedings aren't anywhere remotely close to TV and movies, but legal thrillers/dramas and even legal comedies are one of my favorite genres of TV and movies and I look forward to experiencing it one day. A murder trial would be even more interesting. One of my friends got to do jury duty for a medical malpractice case where someone died because of a faulty product or something like that. He really enjoyed it. I witnessed a car accident in high school and gave a statement, later called to court to testify. I had a lawyer cross examine 16 or 17 year old me, legit trying to turn my words around to change the meaning I thought it was so awesome to not only witness first hand, but to be the person having to actually process and respond to what he was doing. I remember saying something like "no, that's not what I said. I'll rephrase it for you" and clarified whatever the events were. Only sad part was that the entire court room was basically empty beyond the staff working there and the defendant and plaintiff and their lawyers. Its very weird sitting up on the stand overlooking a large, but empty, court room.
