lol. Made some tortellini a couple weeks ago. It was delish! I'm a little off my game though. I went through a period where I was making a pound of pasta once or twice a month and then putting it in the freezer for later use. I'm trying to go through as many different types/shapes as I can. So far I've done tagliatelle, spaghetti, gnocchi, tortellini, cavatelli, and garganelli. Still need to do lasagna, ravioli, and stuffed shells. Plus some more filled shapes like cappelletti and mezzelune. It's fun!

I kid , we do make our pasta every once in a blue moon. But c'mon, a fancy store bought is perfectly awesome and pasta is usually a quick whip up decision for dinner. This is on top of my wine getting taxed to the moon.

Are you talking about the fresh stuff? There are some boxed pastas that are made in Italy. I eat pasta a lot!

Thanks! I enjoy it. Kneading the dough can be a relaxing activity IMO. And then it's fun to see the finished product, especially if you're trying to get into the different shapes.

I've also made my own phyllo dough to make homemade spanakopita. That was NOT as relaxing lol. The phyllo dough is much more fragile. I had enough dough and filling to make 40 triangles, but I ended up with 20 cause half of them ripped when I was trying to work with them.
