Now here is one for you lazy types.

There are three ingredients.  First, some nacho chips and they can be whatever you want.  Even the standard simple tostitos will do.  Second, a loaf (or two depending on the size of the party) of that sheety Velveeta stuff. Use the hot spicy version if you can find that.  Third, canned stewed tomatoes.  Probably a couple of cans.

Yes, Velveeta sucks and is terrible for you but this is great and the easiest thing you could ever make.  Just put on low heat till it all melts and then stir in the stewed tomatoes.  Doesn't sound very appetizing but trust me, voila!

Condiments. Dill relish, spicy mustard, cornichons, a good humus, pita, olives, lox, capers, hard boiled eggs, red onion, a moderately priced caviar. Boursin cheese would work.

I'm dealing with the same crap. I've found it not as bad as I'd heard. I've learned over time what to avoid and what's fine in moderation. I wish insurance/medicare weren't so restrictive about CGMs(continuous glucose monitors) but they are. JRs list is good. Naked chicken wings would be okay I think, just not breaded. Cold cuts should be fine but watch the sodium. Any mostly meat things like meat balls that are not sweetened too much. Rice is supposed to be a no-no but moderate amounts of brown rice don't affect my glucose number that much for example. Potatoes about the same. The things to avoid for me is cold cereal and sweet rolls.  Simple starches or sugars from those send my glucose numbers into orbit. If she hasn't had diabetic nutrition counseling she might consider it, it helped me drop my A1C about 1% with no other changes to medications.

Add a grated onion, green chiles and a chopped jalapeno and you have a dip.

It is already a dip without those items which just take more time but sure

I've done a similar thing with a canned Hormel chili in my youth.   Like you said... terrible for you, but tastes great and is super easy.

I'd mention that a version of what you are suggesting but with a bit more bite is to use the diced tomatoes with green chiles.

Lots of options here depending on what you and your guests usually like. For meats, you can't go wrong with thinly sliced and folded prosciutto, soppressata, and capicola which are pretty common, but you can also go with mortadella or porchetta (my favorite) which aren't as pricey. I'm not much of a cheese guy, but scamorza or provolone are what I make sure I always include. Then at least a couple types of olives for acidity (e.g. castelvetrano and kalamata), a few different types of nuts (almonds, pistachios, or whatever you like), and some fruit for sweetness (grapes or berries).

Guests?!   Nah.  I've done the guest thing for an Eagles Super Bowl before.   No thank you!   I have to worry about making sure they are having a good time and I can't give the game the laser focus it demands.   This will just be for me and the wife (my son is at college now).  So, just me, the wife and the dog.  And if she gets too annoying, she'll go out back and wait until the game ends to be allowed back in!

Right though I think the sweetness in the canned stewed tomatoes is a key part of it.  Probably just sugar but...

Not sure how effective he'll be but it's wild that BG is even able to dress for the game. Would be quite the story if he's able to make another critical late-game play.

We got a big contribution from T.O. in 2004.   I'm hoping that BG can be the emotional leader we might need in a critical moment, and best of all, the moment won't be too big for him, whereas it might intimidate some of the others on the defensive front.   (It shouldn't really be too big for the UGA guys, given their history with National Championship games, but even so, the Super Bowl is still the biggest thing in sports.).   And if he can give them 10-15 quality snaps, while being able to keep them loose, yet focused... its all good.    AND, all it will cost you is the 1 snap that you would be getting from Bryce Huff.  In other words, they will literally be losing absolutely nothing... just like his number.   Adding BG to the active roster for this game is nothing but a net positive... the question only becomes how big or small that effect is on the field.   Either way, just having him suit up for this game is likely to give the whole team a bit of a lift, even if he doesn't get on the field.

Brees is second all time in passing yards and passing touchdowns

Stats.  I think he should get in but I don’t see him as a first ballot selection.    I do see Fitz as one and Witten should be because he was as good at blocking as catching and route running, literally one of the best TEs to ever play the game excelling at every aspect of the game.  Too many are looking at stats alone.  Look at how many listed Allen’s sacks in evaluating his play. Allen was much more than a sack artist.  Brees played 20 years (4 more than Gore - see my longevity comment) and that factors into yards and TDs.   Fitz had more tackles than drops over his career.  17 years, 29 drops. Longevity too but performed well throughout and Fitz played great without the ball too.  So I think Fitz should be a first ballot selection.

They are still tweaking things, but she got herself one of those monitors you wear on the backside of the arm, and she's watching how all the things she loves affect her numbers... then going to the bedroom to work on the elliptical until the numbers come back in range.  We've found a few dinners that really work for her, but at the same time, she LOVES breads.  So, its been a tough transition.   Last night's dinner didn't really cause much more than a blip.  Garlic chicken thighs, with Italian cannellini beans (with tomatoes and garlic, plus a touch of a soft Boursin type cheese mixed in) and roast zucchini rounds with parmesan cheese.     Quite a nice dinner and no rise.  But, nearly everything that she eats now causes a spike.  They haven't gotten her medication figured out yet, I think.  And, she needs to learn how her body reacts to things.  BUT, this is the Super Bowl AND the Eagles are in it... so I want her to be able to have fun with the food and not think about it too much.  The thing is, if the blood sugar spikes, should won't be able to ignore it and will go on to the elliptical to bring it down again.   (Her A1C is actually relatively low... but its been creeping up for years.  Its up to a 6.5 or so now but its been over 6.0 for about a decade.   Genetics are a b*tch.)

It's going to be very important that the Eagles set the tone physically early on in this game, as they have most of this season.

It was the very opposite in the last SB matchup....I distinctly remember a big hit on Smitty to get things started, and KC was the bully for most of that game.

This Eagles team has shown to be the bully all season against some very physical teams, and it will be a must in this game too. It's really our only path to victory as I see it.

This will be the first year since '04 that I'm hosting a big super bowl party when the eagles are playing in it. Back then I was in college and much more of a nutcase when it came to football so I had to retreat to my room at halftime and watch the rest of the game there with a few closer friends that joined me. In '17 I was supposed to host a small gathering but a snow storm threw a wrench into our plans so only one of my closer (and childless at the time) friends came to watch. That game was a lot for me to process, obviously, so he got to watch me unravel mentally in real-time again like he did 13 years prior. Thankfully it had a much happier ending with hugs the second time.

Then 2 years ago, there were some neighbors hosting but I didn't know them that well and I was nervous about watching a game with them since there are a lot of casual fan wives in that group that ask the absolute dumbest questions about the game. "Wait, why are the running backs always running into that big pile of players, why don't they try to go around them? Why isn't it a catch just because they fell down on the white line? How come you can push the blockers but not the receivers?" It's enough to make me crawl out of my skin even if I'm not part of the conversation.

But alas, we are hosting that same group this year against my best judgement and I've promised my wife I'll be normal and not a lunatic like I used to be. Hopefully I'll be able to keep that promise, but we'll find out soon enough!

I would absolutely love to see them manage to lay a big hit on Mahomes on the very first drive and make him spend the rest of the game looking for ghosts.   He takes liberties when he's running around and tries to draw 15 for minor contact.   If I'm Fangio and the rest of the defensive staff... I tell them to just go after him and lay the wood on him.  Tell them, if you get flagged so be it.  We'll take the 15 yards to send the message that this is not the game to get cute in.  If he wants to run, then he's got to be willing to pay the price.   I could see CJGJ being that guy.

I could use some help with the Super Bowl offerings for game day.

My wife is starting out with some Type 2 Diabetes and I'm looking to create a menu that she can enjoy while still being festive.   She loves bread, but that's generally on the no-no list now.

So, I'm thinking one thing that might really be nice for her to have as an option would be a charcuterie tray.   But, I'm not well versed in what those options should be.  I was thinking about some 3 cheeses (1 soft - brie or camembert, 1 hard and funky - gruyere or extra sharp cheddar, and maybe a soft spreadable?), 3 meats (various salamis), and that's where I get stuck... what other things would be good options to add?

Grapes have a low glycemic index.  I would also consider adding almonds, cashews and maybe pistachios.

There's a loophole there for you.   If your 'normal' is lunatic, you get a lot of grey area for grace!

I had my family over for the Super Bowl two years ago.   We really needed it.  It was a few months after my brother in law passed away suddenly, and the family needed to be together for some fun that would be highly distracting from the fact that he wasn't around.  It was a good night, all things considered, including the game.   But, for this game, I just want it to be my wife and I focused on the game.  But, even with a crowd of just 2... I still will need the food to be on point.  ;)

Don't forget Miles Sanders fumbled on the very first play too.

I think the cat is out of the bag on Mahomes trying to draw flags like he did against Houston in their playoff game. Refs are on the lookout for it now so I would be surprised if they gave him another one of those cheap flags.
