I grow my own cayenne. This year I smoked my own paprika. If that second crop of paprika would hurry up, I will just dry that.  Your wife wouldn’t like my chipotle or anchos.  I have lots of chilis this year.  Have some sun ripened Big Jim Hatch that will go into a chili roja sauce real soon.  Bunch of green hatch that I will use to make salsa verde next week using home grown tomatillos.  Probably can some green chilis when I do my jalapeños and Serranos next week. Have some late poblanos that I hope to sun ripen then dehydrate to go with some dehydrated chilis into my own chili powder.  Chili rellenos and stuffed Anaheims are on the menu too.  Still working on where all the habaneros are going. 
 

Never thought of berbere as an option but I do know a couple of people that put some cinnamon in their chili.  Aren’t the chilis in berbere closer to Thai chilis (grew and ground those last year) than the American chilis?
