This is kinda how I do potatoes. Peel and cube them. Parboil in water with baking soda until soft and with fluffy outer coating. Toss in high temperature oil of choice (duck fat, bacon fat, peanut oil, sesame oil, canola etc) + salt pepper and herbs/spices of choice (usually garlic shallots and rosemary for russet, cinnamon nutmeg allspice and a bit of maple syrup for sweet potatoes). Roast at 425 until outside is brown and crispy.

Basically crispy flavorful mashed potato bites.

Imagine if you will what my wife had to endure every day during her year working in England for a horticultural arboretum and nursery.  Imagine you mother taking the sprouts she had just boiled and putting them in a covered steam table to "keep warm" for 2-3 hours until the dinner bell rang.  That was taking your gross and doubling down.

The short story is... the alkalinity breaks down the outer starches, which is why he called it fluffy.  And then when roasting, the fluffy becomes crunchy... and I am very excited to try this.

I do get the bread crumbs though.  Kinda anyways.  I tried many time to incorporate bread crumbs in Mac & cheese for some dumb reason.  It never comes out right for me.  My best Mac and cheeses and fairly basic and delicious.  A little milk and a lot of cheese and line the dish with lots of butter and slightly burnt on top and bottom.

 Bean and cheese burrito is all i can vouch for. I don’t know what their meats are made with though.
