Also keeps the oil from sinking in.  That and blanching are two of my favorite techniques. Now I would think blanching for the Brussel sprouts.  Curious why you don’t cold dunk.

I tend the cut the potatoes a bit smaller so there's more crispy surface area and play with the seasoning/type of potatoes a lot.  Enjoy. 

Do you roast the garlic and shallots together?  Ratio?

The short story is... the alkalinity breaks down the outer starches, which is why he called it fluffy.  And then when roasting, the fluffy becomes crunchy... and I am very excited to try this.

Yeah, NO. You haven’t had good Macaroni and Cheese.  Blend of cheese (play with these as you can come up with a lot of great combinations). Use evaporated milk or cream, mix in cooked macaroni and bake.  All sorts of things I would mix in like smoked bacon, pulled pork, steamed lobster or crab.   All sorts of spices to play with too.  But processed spread and mayonnaise? :nonono:

I prefer mayonnaise!

Turkey brined and air drying.  Started prepping other pieces of tomorrow’s feast.

Funny thing is I grew up in the South but despise it.  My coleslaw has a cream and lemon base that would make you gage at ever eating mayo again. I have a mustard, cream based potato salad recipe that would make you foresake mayo based forever and on top of that never get food poisoning. JR’s avocado based crab cakes are the bomb   Mayo is never worth the calories. I hate that some restaurants call flavored mayonnaise an aioli.  It’s not.  There is a reason that midwesteners outlive southerners and it is mayonnaise. 

Those guys from the Picky Eaters show are coming by my place in a couple weeks because I can't help but eat nothing but spoonfuls of mayonnaise for all 3 meals!

Mayonnaise is a ghastly condiment.  One of the reasons I consider A&W (Ache & Wretch) to be near the bottom of the fast food ladder is they like to use mayo on their burgers.  The combination of mayo, salt, and grease makes one hell of a recipe for a headache.

Even as a little kid eating bologna sandwiches I preferred mustard.

Dude, just look at Mailata next to Lane.  He looks 1.5X bigger than Lane in that pic, FFS.  He's still learning and perfecting his craft and when he does he's going to be unstoppable.  Throw that in with a nasty and protective streak for his 'mates' and we've got a lottery ticket keeper for years to come.  As Jordan said in that 15 minute video about his journey from the IMG Academy to the NFL, he just didn't come to compete, he's here to dominate.

Regardless, it’s the QB putting the ball in harm’s way, and the stat helps remove some of the luck a QB can have in defenders not completing those plays.

If you want to argue it’s not a perfect stat, so be it. I don’t care. I don’t need it to be proven with a scientific method to find it useful. We’re talking about football, and it’s far better than the lazy response of "all QBs have interceptions dropped.”

Sure, but in the end result for example Kirk Cousins threw a ball right into a defender’s hands, defender didn’t catch the ball, and Cousins moved the offense down the field and won the football game.

The result is all that really matters

I disagree when it comes to analyzing his play. I’m not analyzing the final score.
