It was interesting how city planning, white flight, etc. impacted all of the inner city parks from that era and why Wrigley and Fenway are still around.

The A's are dead to me.  They were never a Philly team.  

 

 

 

For whatever reason, my great grandfather and grandfather were not A's fans, but fans of the Phillies.  Gluttons for punishment, I guess.   So I've been brainwashed all my life.

Need some help with a recipe for tonight.  Here's the thought I have...

stuffed with sun-dried tomatoes, mozz & prov cheese, minced garlic, a bit of fresh basil and some parsley.

This will smoke for about 2 hours at 275-300 degrees...

I am looking for a spice rub to really give it an extra kick of flavor and a glaze of some sort to finish it and raise it to the next level.

I am thinking about a bit of a honey garlic rub I have, but the glaze continues to elude me.  Suggestions?

I'm late to the party but I have a couple of suggestions.

For the glaze, use apple juice. Yes, just apple juice. Apply several times through the process. SPray it on if you have 

For the rub, do you have a mortar and pestle? A small amount of light brown sugar, sea salt, oregano, basil, thyme, and lemon zest. Mash it up. Easy on the brown sugar to avoid burning. I like to add a little star anise here but you may not like it. I'm not big on honey in a rub or a glaze; to me it overpowers all the other flavors.

This intrigues me.  Can you tell me more about it?  What does it end up doing in terms of flavor?

Yeah, I use 50/50 apple juice and apple cider vinegar for a spritz on ribs and pork shoulder/butts.  Never heard of it with chicken though, and never alone.  I glaze the pork afterwards and use the juice and vinegar for crust formation without drying it out.

 

Curious about straight apple juice and chicken.  Does it actually provide much in the way of a glaze?

I'll keep this in mind for the next stuffed chicken.  That will likely be an apple and brie stuffed breast or thigh.

Oh.  I was more thinking about BBQ and smoking.  But you do you bro.  

I was going to try to smoke that stuffed chicken stuffed with apple and brie.  The season is here for running some experiments outside... and since my indoor kitchen is pretty much in tatters currently, I need to cook outside anyway.  (Not that it's an inconvenience... I'd likely be doing about 75% of the cooking outside right now anyway.).

Apple juice is sweet but won't burn in this application. Adding it in several layers moderates the glaze but retains the flavor. If you use unfiltered apple juice (the cloudy kind) you'll get a darker glaze. In either case, the glaze is less relevant than the flavor because you've wrapped the thighs in bacon.

Geno Atkins only played until he was 31 and he wasn't that good his last season.  My gut sense is that the team should move on and take the comp pick.  
  • Kyzir White - sneaky issue, unless Davion Taylor emerges - Taylor seemed to improve a fair amount last season.  If they move to a odd front, I can see the value of keeping all 3.  White would be a no-brainer type extension if he's above average.  
  • Marcus Epps/Anthony Harris - neither would be here separately, but when both of your starting safeties are potential FAs, it is a bigger deal - Meh, I mean I hope the team can move on from Harris.  If Epps plays great, then he should get a new deal but if he's a JAG I see no reason to worry about until after the tier 1 FA safety market is set. 

Tier 2 issues:

  • Fletcher Cox - thanks fletch, may become a depth issue depending on how Davis and Williams play- I think we will see Fletch playing a fair amount this season with Davis and Hargrave.  My guess is that odd man fronts will become more of a norm.  Cox and Hargrave are connected and maybe the question is which is a better bridge given the draft a potential FA market.  If Williams comes on and looks like a stud, is it cheaper to keep Cox one more year vs. re-signing Hargrave.  
  • Brandon Graham - highlights a need for a talented, young DE - Yup - 
  • Jason Kelce - hopefully addressed by Beef  - Does he pull a Jason Peters? 
  • Gardner Minshew II - this franchise loves its QB room - If they draft a QB early, I think the move is to re-sign Minshew and trade Hurts. 
  • Miles Sanders - keep or go and, if so, how to replace - Sanders is a low mileage RB. He has flaws but he's above average as a runner.  That being said, if he's not taking some team friendly deal, see what's available in the draft. 
  • Le'Raven Clark - swing tackle is pretty important around here - Has anyone seen him play enough to know whether he's worthwhile? He's not some top tier prospect. He's  JAG.

  • Sua Opeta - I think he's got more potential than Clark.

The fact they brought them all back suggests they think they have upside, so assuming one of the young CBs is going to switch over and beat them out is premature.

The only CB who tests out as impressively is McPhearson.

Doesn't mean they can play, but when you start with guys who are 5'11/6'0 and 200 lbs, who test like top athletes, at least your DB coach has some clay to mold.
