Should have picked up the buy one, get one free London Broils at Giant.  Got one marinating in a bourbon marinade right now.  Will go on the grill Monday.

Yes. Saw that. I feel that Araiza's team know they have a pending tryout/deal and are itching to get this trial severed from other defendants accused (which that trial would be in Feb next year). Eagles have to be an interested team here once this clears up. Agent specifically stated that no one will touch him til civil suit is clear. I see Howie pouncing on this. Just like Vick. He should minimally be signed to the practice squad. Araiza's Agency also liked a favorable Eagles Araiza post by Eagles Nation on X.

Thinking about it.  Sadly, time is less available for the real fun of cooking.

 

I love to use the London Broil (aka, top round) to make steak fajitas.  I cook them up whole (after a strong lime juice marinade) to get a great char on the outside, but still very blue inside.  Then I let it rest.  Then I slice it against the grain... roughly 1/4" thick slices.  (Searing the outside like that makes slicing much easier, plus adds an extra layer of flavor.).  Then we cut those slices into thinner strips by cutting against the grain again so that each slice gives two or three strips, depending on how thick the cut is.  Then we cook those up under very high heat to medium-rare up to medium (for the wife).   They get a quick redip into the marinade before going back on to the grill (we use a cast iron griddle over the fire pot on the Pit Boss to get a screaming hot pan so that it cooks super fast to char the outside without over cooking the inside).   They literally go on and off the griddle as quick as I can load them up.   Put down a layer of strips... then immediately turn... then pull off and redo it until it is all cooked.  So good.

We were doing so good about not talking about Araiza after the report Eagles have no interest too. Reset the daily counter.

I think most excited just to watch this new defense.  New era on that side of the ball with all the young guys taking prominent roles and the new DC.
