Got a Brisket in the freezer right now. Will be only the 2nd Brisket I've done, the first one turned out pretty good, was a little dry on one end.

Took it out and wrapped it to get through the stall.

Wondering if you got any tips for brisket so I can get it even better.

Who is betting on this?

Not much on briskets.  I’m more of a pork guy. Most smoking and bbq’ing is realizing how much smoke flavor is enough but not too much. You still want the beef flavor to come through.

Yeah butcher paper, I was told foil would dry it out.

We smoked it for about 6 7 hours then it stalled and we tried to ride it out but the temp wasn't budging so we took it out and wrapped it and pulled it out of the stall.

It ended up being really good it was just kinda dry on one end.

As for pork yeah I like pork more than beef as well.

We tried a bone in butt about a month ago and it was good but again was a little dry at parts and not sure why? 

We did a smoked turkey breast for thanksgiving and it was awesome!

When I say" we" my wife is the other part of we, she enjoys smoking meat as well.

Jacquett and Ford are practicing.

Yep, in his prime he was pretty much automatic for Dallas. Not sure what happened, whether he suffered an injury or just fell off. He's only 32 so he's not even that old, especially for a kicker.

A lot of evaluators thought Jefferson would be a slot guy, but I don't think it was as an underneath slot guy. It was clear at LSU that Jefferson excelled down the field. Working leverage. Adjusting to the ball. Route running. Hands. He wasn't an underneath guy. Was he a 4.2 speedster? Of course not.

It takes more than speed to make big plays in the NFL.

Yeah, as evidenced by the 4 kickers we have gone through since Akers (Henery, Sturgis, Parkey and Elliott).  Each of them had their moments but none have been a long-term solution and Elliott obviously is trending that way too.

Funny enough, looking back at each kicker's stats here, Elliott has the worst FG and XP percentage of all four. Parkey was 100% on XPs and 87.5% on FGs. He's had some pretty bad years outside Philly though.

 

Sound familiar?  Basically what I assumed to be the case.

He’s so hyped up. I think he does very well on ESPN but that doesn’t mean he’ll crush it as a GM. Wouldn’t be shocked if ESPN ups his salary to stick around

Sounds to me like you aren't wrapping soon enough.   The brisket should be wrapped once you get a nice bark on the outside and let it finish that way.    Same with the butt.  Or... you are not letting the meat rest nearly enough before you are cutting into it.  As with anything in BBQ... patience is the key.  You can't rush good Q... and you can't skip the resting period.  Or else all the juice ends up on the carving station, not in the meat.

 

I'd suggest watching some HowToBBQRight on youtube.

I don't like him. I think the only reason he gets brought up here so much is because he trashes Roseman publicly.

He's got a long way to go for Bobby Taylor status.  More like Matt Ware... if we are lucky at this point.

Mayock hasn’t done anything special yet. 
 

Riddick seems to be a real smart guy but I think he’s probably a tad overhyped because he’s on ESPN and people know who he is. There’s possibly a dozen guys within the 32 teams just as talented. 
 

Not saying he won’t do a good job.
