I think it gets lost in the annals of history because they missed the playoffs, let alone failing to win a Super Bowl. People talk about the 85 Bears, and the great Bucs and Ravens defenses. The Eagles were every bit as good and people outside of Philly don’t really know it.

I mentioned this previously on this board, and in the past years ago on the other board.   I'm not sure Howie has ever come out and said it this plainly, but Howie is telling the truth here.

Ok.  What should I cook next weekend to spark conversation?   And no it won’t be Rocky Mountain Oysters.

Sweetbread

On the topic of crabs, I like any and all seafood but soft shell crabs. I really don’t understand the appeal of them at all.

I don't want to get too political and I certainly don't want to get into too much of a racial discussion.  However...but just an example of the slippery slope with this coaching thing...with affirmative action on college admissions, certain minority statuses are tangibly worth several hundred points on SAT scores and other standardized tests in comparison to other applicants.  That's the input side.  On the output side, academia cries injustice and tries to dissect the problem when the same groups have much lower GPA's and graduation rates.  If you have uniform admission criteria, then you'll have uniform performance.

If you lower the standard for people over 6' tall to get a job/admission/whatever, then the taller people will always be lower performers on average.  Not rocket science.

I know racism is still a problem in society and old wounds are still open, but institutional inequality is dangerous.

Affirmative action is way cheaper than reparations, beat the system. Probably free college or vocational training over several generations is more realistic and will help get the job done IMO

I must have been feeling the same way about covid-19 isolation. I bought my wife a gas-fired pizza oven:

Was looking at those, so you prefer the gas to wood ? I know less hassle but was thinking wood would give it a better flavor.

Zatarains is boss.  I agree.  Much better than Old Bay.  But my wife is a MD girl and she’s particular about her crustaceans.

I like J.O. better than OB but never tried Zatarains but always steam crabs

Ah. For some reason "Chesapeake bay" blue crabs are more expensive than LA or NC Blue Crabs. Tastes the same to me.

Bushel of 1's here on the bay last week were 250. Lol

This is some point of view.  Some people don't want to acknowledge it at all, and when its so obvious it just can't be ignored, they diminish its potency and impact so they can cry out there's no racism!  That is heartbreakingly pathetic

Wadda ya gonna do ? You can lead a horse to water ...

Most restaurants make a really lousy crab cake. All mayonnaise filler and little lump crab meat with a hefty price equals great margins.  A good crab cake should be very light on binding, almost delicate, with more of a dusting of exterior breading than the typical thick bar style fried exterior.

A good crab cake is fantastic precisely because it makes the crab meat the center of the dish and doesn't try to do too much else to it.

Yeah, G&M and Edgewater Restaurant jumbo lumps. Don’t even get me started on softshells

Yup ill pass on the Rocky Mountain oysters

Never had but I heard they were great, deep fried I think. I know the one time I had veal sweetbreads they were excellent sautéed in butter

I was talking with my dad the other day, and he was lamenting that he can't get cows brains any more.  His grandmother used to make it for him as a kid for breakfast... eggs and cows brains.

Make that.

Not quite. Lurie bought the team from Braman midway through 1994.

I didnt eat sushi until i moved out of utah after i got married. We were living in SF bay area and my wife took me to china town and all the little chinese kids were making fun of me because i couldnt use chopsticks so the old lady that owned the place brought me a fork😄 ive gotten better since then with the chopsticks and love most sushi, my parents who still live in utah wont eat sushi and still have never had it.

Lol guess i need more practice ive only ever had crab legs once.

Break both ends off and just blow hard from one end just make sure you don’t hit anybody. Learned this method from my days at Chesapeake Bay Seafood, oh I wish that place would come back, great deal if you can pack it in

I thought Kotite was only there for 2 yrs, how could I forget

Heard they are good too

Yes the famed 10 lbs of off season muscle😉

The guys that were rookies last year are a year into being a professional athlete. They are earning a decent living as athletes and have no classes to attend and study for. It is a full time job.  So yes, I expect that Dillard is doing squats to build his leg strength.  I expect that Miller has been doing a pretty full regiment of lifting to go from his 16 rep strength to something closer to Graham’s 31 reps.

Sadly it was 4.  Lurie bought the team at 7-2 in the 1994 season.  Then lost 7 straight and got kicked up the turnpike to the Jets... because Leon Hess "didn't want to wait to win".

Completely random point about Marquise Goodwin...Rich Scangarello was the QB coach in SF when Goodwin had his breakthrough season.  I'm sure Howie must have had a discussion about Goodwin with him and how they might use him.

IMO, this every so slightly increases the chance of that lottery ticket hitting.

I think as far as Goodwin goes, it all depends on his health.  He’s shown flashes of being an above average (to pretty good) vertical threat when healthy.  If he comes into camp at 100% health, learns the playbook, etc I don’t see why he wouldn’t make the team.   But given that there’s 2 other guys (Watkins and Hightower) who are fighting for that 4th/5th/6th spot, it should be a really interesting camp.

Arrosticini.   One of the more famous dishes from the Abruzzo region of Italy.   It’s basically Lamb chopped into 1/2 inch by 1/2inch cubes, put on skewers, then grilled over (preferably) lump hardwood charcoal.   If done right, it won’t have any of the "gamey” taste of Lamb.  The secret is to use a thin layer of fat in between every 2nd or 3rd cube on the skewer, season with just salt and rosemary.

This is what they look like when grilled on a specific grill for Arrosticini.
