Guess I'm in the minority with lamb, love it.  Lamb meatballs with tzatziki and mint pesto, braised lamb shanks with wine and herbs, tagine cooked moroccan lamb curry, grilled lamb rack with tapenade butter, lamb shawarma, slow cooked pork shoulder with pomegranate  molasses...

All spiced which makes it more tasty.

I mentioned this previously on this board, and in the past years ago on the other board.   I'm not sure Howie has ever come out and said it this plainly, but Howie is telling the truth here.

Nah, you aren't in the minority.  Quite a few civilizations are built pretty well on lamb and goat.

Goat is good. Great animal to spit over a wood grill. My sister is moving to the Texas hill country this summer.  Once this Covid 19 is under control it is Texas wines and BBQ, including the goats they raise there, for me.

Debating on pulling the trigger on this grill.  I’ve had my share of grills over the years, both charcoal, gas, etc.  Up until about 5 months ago I was living in my 3rd floor condo (Basically my single/bachelor pad/man cave).  (We weren’t allowed to have any sort of grills on our patios).

I’ve since gotten engaged and bought a house back in January so time to get a nice grill again. (I’ve been using my smaller charcoal grill and camping grills to get by)

I saw this grill a few months ago and it’s basically a smoker, charcoal grill and gas grill all in one.  When I looked at it at BJ’s wholesale club it looked pretty sturdy.  It was listed at around $500 but Bj’s has it marked down to around $400.   The reviews are generally good other then saying it’s basically a pain in the arse to set up and assemble.

Anyone have any experience with this grill?  It’s called Smokey Joe’s something or other:...

Just egg wash?  Never heard of that in crab cakes.  And like I said.  I made them for years.

Never made crab cakes  but I have been pan frying for years and use egg wash as my binder most of the time. Sounds like even with jumbo lump you must need a thick filler with the breading to hold it together.  Some places down south serve crab stuffed hush puppies. That uses a egg and buttermilk binder.  That’s why I asked why Maryland crab cakes use mayonnaise as a binder.   You are in the south now so maybe you will run into some crab stuffed hush puppies on the menu.  They tend to be more mid south like Mobile to east Texas.

A lot of times places will offer free assembly/delivery if you spend X. Any chance they do as well? I got my Weber at Lowe’s and they took care of all of it.

Ace, I googled it and Lowe’s has it for $499 but does a price match (I got my Weber for $100 off because I found a site that was ridiculously cheap. They assembled it and delivered it for free. I’m not sure if that was just a special that weekend or what.

Sadly it was 4.  Lurie bought the team at 7-2 in the 1994 season.  Then lost 7 straight and got kicked up the turnpike to the Jets... because Leon Hess "didn't want to wait to win".

That's not correct. Lurie bought the team in May of that year. I believe that at 7-2, Kotite made a comment about his job security, which ended up biting him in the a** down the road, so maybe that's why you're thinking of the 7-2 moment.

I actually bought my fire pit at Lowe’s and they let me take the floor model which was already assembled.  They have this same grill at Lowe’s but I think it’s $500 there.  Also, if I remember correctly, the thing is huge.  I’m not sure it would even fit in the back of a 6 foot truck bed if it’s assembled.  And to get it delivered I think they charge additional fees.

I’ll call BJ’s and ask...maybe even call Lowe’s to see if they’ll do a price match on it.  👍

I use a ripe avocado as binder.

Not sure I ever had a good one.  When I would have out of town visitors we would go down to the Inner Harbor in Baltimore to the name seafood places and with the kids as adults we would go to trendy places in Fells Point.  Tried but never liked the crab cakes   Do you make your own or is there a place you recommend

Now I grew up in New Orleans and Houston, so it could be my tastes.  We were used to seafood right off the boats or the Kemah fish markets. Burlap bag of oysters. Watch the seafood guys dehead and devein the shrimp right in front of you.  Live blues steamed or boiled in Zatarain’s.  Red snapper and red fish right out of the tank.  My wife is an island girl and her folks new families that made their living from their boats.

I make my own for sure. A good crab cake just isn't a good product for a restaurant to serve.   It's either going to be poor quality (too much filler and not enough meat), too small (if high quality and offered at a reasonable price) or too expensive (if the portion size is acceptable). I use jumbo lump, keep the mayo and mustard binding very light, plain panko bread crumbs mixed with old bay and a little salt.  Pan fry in butter.

Presentation is better if you make them large, but I tend to make them smaller. Like 4for4 said, you need to be gentle with them, and the weight of a large crab cake with light binding will make it fall apart more easily.

If you have the storage, I would keep separate. I have three.  My Weber four burner gets the most use. For charcoal I have a small Weber kettle.  For smoking I have a two level barrel smoker that is older than any of my kids.  I can use with both wood and charcoal.  I prep the wood in my fire bowl and feed through the door. (My fire bowl has a grill I can attach too.)  My favorite uses for it are brisket, butt and jerky. For the latter, I start cooking at night and give my last feed about two a.m.   Wake up the next morning and the fire is out and my jerky is ready.  Flank or round for the jerky.
My advise is measure the largest thing you will smoke and see if it fits on that smoker with inches on both ends.  If your smoke salmon, briskets or tenderloins, you want them to fit well. To me, a side burner is a waste.  I suspect this is an either or device. Either smoke or grill.  Do you need to detach the propane to smoke or charcoal grill?
