That's how I used to do it and still do every now and then if I'm feeling it. But med is perfectly fine on most cuts, it's how the majority of the steak eating world does it. NY strip is one I find much more enjoyable at med.

Truthfully I don't indulge in steak very often, but when I do I lean in.

I don't even care that much for filet, I prefer a good t-bone. Marbled meat nestled between a fatty deposit and bone is the best.

Prep is big. A steak properly salted for 24 hours or so with some cracked pepper and garlic late stage makes a t-bone or ribeye superior to a filet imho.

Good timing for all this talk. I’m doing a nice aged NY strip with fat cap tonight. Have to see what they have at the market. Maybe something from Spain or the old Uruguay standin which is never wrong. I have an old cast iron pan which is perfectly seasoned. I’ll have the beef heavily salted and dash of black pepper for three or four hours ahead. Pinch of olive oil to heat the pan and then a click of butter midway in the process. Maybe throw in a sprig of rosemary. Medium rare to near medium across a couple steaks so people can pick. Either a nice Cali cab or a Chianti Classico to pair. Post dinner weed and sharp cheddar.
