All depends on the cut of meat and what I am hungry for. I will sacrifice decent bourbon on occasion with a cut like a sirloin for a bourbon marinade. A friend injects some dark beer into brisket, which actually turns out pretty well. It’s all in what flavor you are going for and what you are matching it with. Thing with smoking is smoke flavors the meat and spices must compliment not compete with the smoke. But I always have a variety of woods on hand except oak, which a lot of places in Texas like to barbecue with. Oak can overpower the cut. But I use wood in my smoker as a fuel. Wet some but not all. Never use any petroleum products to start my fire. A chimney and kindling and such to get it started.
