Went with roasted chicken tonight (family favorite). Rice and spicy corn with a little diced bacon. Was gonna make a nice tall glass of grass juice, but then I remembered I opened a Malbec a couple days ago so I had 2 glasses of that instead.

Looks fantastic. I do a spatchcocked whole chicken pretty regularly.  Everyone should know how to roast a bird.
