But I always have a variety of woods on hand except oak, which a lot of places in Texas like to barbecue with. Oak can overpower the cut. But I use wood in my smoker as a fuel. Wet some but not all. Never use any petroleum products to start my fire. A chimney and kindling and such to get it started. Exactly. And oak is the only wood I'll use on a brisket. Maybe a bit of mesquite too. Jack Daniels sells chips from their old charred barrels. Was the best brisket I've ever made. I buy up all the store has whenever I find it.

Since I’m new into the game I’ve been watching some YouTube vids from some pretty popular guys. One just did a video breaking down an actual whiskey barrel and using that to smoke a brisket. His conclusion was it didn’t make a difference besides the smell of the wood.

It’s kind of why I’ve been saying i wouldn’t be surprised if they looked to deal him. after what jonnu smith and Hunter Henry got his price is likely out of what the eagles wanted to pay. Jonnu smith is making 12.5 million per year and got 31 million guaranteed. Henry is getting 25 mil guaranteed and also 12.5 mil per year. Hooper got 11 mil per with 23 mil guaranteed. Imo i don’t think any of those guys are worth that price but free agency allowed for it. I like goedert and he has upside to be a top 5 tight end but he has yet to start healthy for an entire season. Great blocker but as a pass catcher you’d like to have seen him make bigger strides last year building towards a major breakout and he got hurt and a bad offense. i just don’t think it’s out of the question he’s either franchised next year or dealt at some point.

They also just agreed to do more testing for vaccinated players so it’s easy to see where this goes. Even a hint of an outbreak they will immediately go virtual and isolate and they will push the game to a Tuesday or something and those eligible to play will and those not elligble won’t.

Smell is a big component of taste, so for me, it's a nice flavor boost. I love opening up a fresh bag just to breathe in that smoky whiskey aroma. Wafting is also how I make sure my smoke is nice and thin without getting too acrid.

I prefer mesquite with my brisket but that may be because I really like mesquite. Give pecan a try. Speaking of Jack Daniels. There is this winery east of Dallas that sells a bourbon barrel cab that is one of my favorite local winery wines. This fall, I am going to make a Meritage and I am seriously thinking about replacing the oak chips they sent with the wine package with some Jack Daniels oak chips. I am not a huge fan of chips but until I can local a decent small cask oak barrel, it is what I have to deal with. One of my favorite distilleries, Garrison Brothers (their double barrel bourbon is unbelievably good) is a small cask distillery and I really want one of their used barrels.
