Transporting food led quickly to use of preservatives to elongate the foods, whether smoke or salt initially. Just like heavy hops were used to hide the skunk in beer shipped to India (resulting in this obsession with IPAs) preservatives, especially salt, have flourished to extend foods. Been that way for quite some time, but with refrigeration, it’s kind of stupid that we hang onto this habit and even extend it. But salt as a payment to Roman troops gave raise to our "salaries ". Hell, the Whiskey Rebellion really arose out of a sin tax from one side of the Appalachians on what the producers viewed as affordable shipment of their preserved farm product.
