A quick word about marinades for anyone who cares. Marinades for meat that cooks quickly should, IMHO, include oil. The flavors will not really penetrate the meat but the oil will insure an even distribution of the seasonings which will then be captured in the sear. Smoked meats, OTOH, do not need the oil because they stay in the marinade longer and cook slower, so the flavors can penetrate. I don’t like salt on a slow cooked meat because it draws out moisture. On grilled meats, however, it helps form a crust that seals in moisture. As I’ve said before, I don’t marinate poultry; I think it’s a waste of time. I do mix up a herbed.butter and smear it under the skin. Butter, tarragon, thyme, salt, and minced garlic under the skin, rub with avocado oil (high smoke point), spatchcocked chicken, of course, put the cast iron pan in a 500 degree oven for twenty minutes to get it screaming hot, then put the chicken skin-side down in the pan, lay a piece of non-stick foil on it, then another cast iron pan or lid on top, turn oven down to 450, roast for 35 minutes, flip the chicken over and roast for another 5 minutes. Let rest for 10 minutes. Perfect chicken, crispy skin. I do  this at least once every two weeks. Get a small chicken ~ 4 pounds or less ~ so that it fits comfortably in the pan.

I do inject chicken when I am doing a barbecue sauce.  I agree that is is imperative to rub the spices under the skin.  I do lightly soak chicken that I am going to grill but then I air dry it in a tight lidded stock pot.  I have some leg quarters I will grill tomorrow.  Likely either a spice rub or garlic butter baste. (Unsalted butter if the chicken was brined.  I strongly encourage folks to have some sort of herb garden.  Fresh is so good for chicken.  

I use salt in my brisket rub.   To keep smoked meat from drying out, wrap it toward the end of a low smoke but I recommend taking off the wrap about an hour before your meat reaches your target temperature as it keeps the bark from getting soggy.

Oh nice, grilling conversation.  I was just going to ask if any of you guys on here who grill have ever considered or have purchased Grill Grates to replace the original grilling surface.  I have a basic Weber gas grill but thinking about putting grates on instead.

I liked claypool pre draft, I didn't think he'd be drafted in the 1st and if the eagles took a WR in the 1st I didn't think taking claypool in the 2nd was a good idea.

If eagles went other than WR In the first and claypool was there with their 2nd pick then they absolutely should have drafted him but that's not how it played out.

I don’t like any prospect from Notre Dame. And I blame that mostly because of Rudy.

I saw that trending today and man I just loved Michael Vick.  Honestly, I think he's my favorite Eagles quarterback.  I think he's been 100% sincere in the changes he made in his life since Atlanta.  He came here and was nothing but a great teammate and boy was he exciting to watch.  He was flawed but every QB we've had here has been.  The middle 3 years of his Eagles career was some of the most exciting football I've watched.  Carson in 2017 comes close but Vick was just special and must see TV.

It's odd, some amazing teams should have had rings.

The Harbaugh 49ers, Levy Bills, Reid Eagles, Schottenheimer Browns, 2017-2020 Saints, etc.
Those were all the best team in the league during their stretch.

This article just reinforces why they choose Sirianni, he's focused on teaching and fundamentals, not showing how brilliant he is with innovative schemes.

Everyone has film on everyone these days, the real edge in the NFL (and most sports) is player development and team execution. And that starts with teaching.

Which makes him perfect for this phase of a rebuild, come 2023 we'll find out if he can coach up the finished products on the field.

 

For all those people who think HCs don't influence draft decisions:

I’ve been a big fan of the Colts’ in-house With the Next Pick show. And it sounds like one nugget from this year’s edition might be coming to life. At about the 12-minute mark of the last episode, they showed Frank Reich basically announcing to the room, "I like [Kylen] Granson a lot. He’s gonna play.” GM Chris Ballard then joked that Reich sounded like a scout, pushing for one his guys, before the show cut to scouts talking about the coach’s love for the SMU tight end. Assistant director of college scouting Matt Terpening said, "Frank came in the draft room one day and said, ‘Hey, I watched this Granson kid, he can run, he’s athletic, I really like this guy.’ ” Director of college scouting Morocco Brown then added, "You could tell he had this little love affair. He just had those puppy-dog eyes, and he spoke up and said what he had to say. He knew how to get the room’s attention to get his guy.” After that, as Ballard went up to the board, right before revealing Granson would be the 127th pick, and piled on, "I think Frank’s gonna come out of his seat.”

You can tell by the video reactions that Howie is making all of the decisions.  

Schwartz got too much say as a condition of his hiring as a "co-HC," Doug got too much say after the SB.

It's a matter of balance, most HCs want to "choose the ingredients," that's a common complaint around the league by HCs.

On the other hand, you want input into the draft process from HCs and assistant coaches who'll have to coach the players chosen by the personnel department.

This is why the consensus model is optimal, but it requires a HC who can swallow his ego, took AR the failure of the dream team to concede he's not a personnel genius.
