Pork ain't BBQ, just sayin'

How is pork not BBQ? It’s a BBQ staple across all the variations like St. Louis, Texas, Kansas City, Tennessee, Carolinas.

I turned 38 today and have lost 52lbs since February. I’m very rarely ever proud of myself, but I’m feeling pretty proud today and thought I’d share. Carry on.

  • At this point, I’d like to see a former HC on the staff, but the biggest coaching news left is whether Stout stays.  BOOOOOOOOM

Yep. He's a hard worker who try to continue to improve, the question is whether he can process fast enough to go through options in the heat of battle, and only one way to find out.

McNabb ran an option offense at Syracuse where he only looked at half the field, yet in two years AR had him going through progressions and not just taking off.

So what I'm looking for from Hurts as a "rookie" (last year's development was truncated both by COVID and not getting reps with the 1s) is improvement, if he's in the top 20 this season, he deserves another year to show continued improvement as a passer.

I don't see the urgency to trade up to the top 3 anymore, colleges are producing more QBs each year as the passing game predominates and more kids get trained in HS, whereas Westlake HS might have been an outlier 10-20 years ago, HS coaches pass far more, so kids are more developed coming into college (and attend summer passing camps/leagues as well), and far more colleges rely on the pass. The bigger problem now is the predominance of RPOs and spread offenses in college - which makes it harder to judge college QBs off film - but also means that it's quite possible than Fields or Jones is the best QB in this class ten years from now, similar to Mahomes and Watson.

maybe it's because everything is still so raw, but I'm really gun-shy about dumping a lot of resources into a single shot at a QB anymore.  Wentz decides he doesn't like us anymore and all that we put into drafting and developing and building a team around him is gone.  Or your QB can be too into happy endings and it all goes to crap.  Or they just aren't who you hoped they would be.  It's one thing to take a shot on a QB when you are drafting high and miss.  It's a whole other thing to pool resources for that guy and have it not pan out.

I think I'd rather use a 1st rounder every other year for 3 years than trade back to back 1sts to move up for a guy.  Almost no matter who that guy is.  For every Mahomes, there are a whole lot of scattered bodies littering the floor who don't pan out.

I know Baldy and hyperbole, but I enjoyed this... :D

I'm usually against stereotyping against cities or regions and the people from those areas.  I tell people all the time that I am from New Jersey and a Philly fan.  Then I spend 10 minutes defending both because they think the know by what they hear or see on TV.  I tell people I now live in the south and they think all kinds of BS that is inaccurate.  I live in a more diverse area now than I have since I lived in MD.   I am in SC often and will be later this week.  Was in Mt. Pleasant and Charleston a few weeks ago.  Would rather live there than most places in the NE.  I can tell you, I've seen more questionable people in WV and central PA than I have in the south.  In my travels I can tell you one state that has lived up to it's reputation and that's WV.

It's not the people; it's the politicians. I'm thinking here primarily of John C. Calhoun but there are others.

Charleston is quite lovely, but I could never live there. The heat and humidity are brutal. It's as bad as Houston. It does have a fascinating history to be sure.

I have some dear friends in WV. How about that! But I hear you. And parts of central PA are Klan country.

Show me a draft that doesnt

1974 Pittsburgh Steelers.  Possibly the greatest single draft of all time.

Round 1 - Lynn Swann
Round 2 - Jack Lambert
Round 4 - John Stallworth
Round 5 - Mike Webster

Yeah.  He has an unhealthy affinity for Dickerson.

Politics and Klan?  WTF are you talking about.  Go away.  JFC.

Dude. Calhoun died 170 years ago. I didn't think I was being controversial.

Who did they draft in round 3?

Find me a Baldy cut up where he's negative.  I don't think it exists.

Traded.  Not sure if it was during that draft or before.   They had 2 4ths.  The second 4th wasn't worth mentioning.

BTW... interesting side note on that draft by the Steelers... they almost made Stallworth the first round pick, but they decided since he was from a tiny school the odds were greater that he would slip through the cracks and they could get both... then they didn't grab him for 3 more rounds.   Kind of ballsy.

Even if Hurts is really bad this season, I’m dead-set against using more than one first round pick to climb up to #1 or 2.  That’s just not the best way if you’ve still got roster holes.  Identify the right guy like KC did with Mahomes at #10 or HOU did at #12.  Those teams both gave up some draft capital to move up, but not the overpayment that SF made to go #12 to 3.

I like Trey Lance, but Lynch and Shanahan have been getting roasted some for not being more patient and getting him at #6 or 7 — where people think he might have been available — all in 20/20 hindsight, of course.

If Hurts is really bad, they might not need to trade up for the 1st or 2nd pick.

Bad advice from the union.   They aren't looking out for the individual needs of the rookies, but only about their own best interest, aka, the best interest of the vested veterans, not the bubble players, that may not be vested yet, that are likely in need of any advantage that they can find to stick on the roster.  Shameful.

As a member of a union myself, it has always been the position of our union that any and all 'union' actions were carried out only by the vested members, not the more vulnerable ones.   Poor leadership.   There's solidarity and then there's sacrificing the most vulnerable.

Hey Rookie, stay home. It's in your best interests*. Love NFLPA

*Well, its not. It helps our vested vets stay on rosters and you to be on the PS or on the street

Getting in on the BBQ discussion...

Different regions have different flavors and styles, mostly influenced by what was readily available.  But, the one thing that I believe most BBQ lovers will agree on is this:

BBQing ain't grillin'.  Low and slow, FTW!  BBQ is an event, when done right.  And there's no way to get around the time aspect of proper BBQ.  It takes time and patience, but if done properly, your patience will be rewarded with some of the greatest flavors there are in the culinary world.

Cosell really liked Patrick Johnson. He thought stylistically and body type, he reminded him of a young Shaq Barrett. (He’s not saying he will be as good as Barrett)

Also, he thought Gainwell stylistically was like a less talented Kamara. He really liked him.

Baldy definitely takes it over the top but I will say he makes some good points here, especially the first play.  Ole Miss did choose to double up on Smith rather than Ruggs, Jeudy and Waddle.

What impresses me on that play and what happens on almost every Smith highlight is he just always somehow finds the corner and outruns the defender even though he doesn't look fast.  He just finds a way.  It's the weirdest thing.

Out of that group.  Who do you think, I believe is one of the most overrated players in NFL history?

Swann would be my guess.

Perfect example of carrying water for access.

Yep.  Grilling is burgers, brats, dogs and sometimes steaks.  I’d much prefer to broil or pan sear a steak then just grill.  But that’s just me.

I’ve been slacking as of late.  I’ll step my culinary game up and share with my fans.  I do want to make smoked pork belly this year.

I like sous vide and seared steaks as my preferred method now.   And sous vide makes even some of the tougher steaks almost as good as the more expensive ones.   AND best of all... there's not much in the way of guessing on the temps for amateurs.   Just set the temp, set the time, and then away you go... Works best with guests as well, as you can really get the timing just about perfect, without being a slave to the kitchen when your guests arrive.
